Do they make one that will pop out or unbolt so I can still use the bed of truck.

All 5er hitches "pop out" so to speak. I'm not following the question
OP are you looking for a hitch that doesn't use standard hitch rails that stay in the bed. Even with hitch rails you can still use the bed. Its more of a cosmetic thing.
