5th wheel hitch
Do they make one that will pop out or unbolt so I can still use the bed of truck.

EXACTLY!
Mine rubs the "D" rings, when installing that made it a no brainer it's centered side to side automatically. I used a self drilling #10 1/2" screw in each of the upper back corners of the box to secure the box to the truck bed.
I was lucky and found mine for $300 but if I had to buy new I would not hesitate even at over $1,000!
