Looking at buying 5th wheel. Are the ones with one 15 btu sufficient or do I need to look for 2.

It depends where you live, mostly Park in sun or shade, etc.
I have one 15k in my 37' bunkhouse fiver and it cools everything fine.
The downside to having 2 AC units is you need to have 50amp service available. Not too many campgrounds in my neck of the woods have 50amp. At least not the ones I go to.
