You already got some good answers by people on this forum that know a lot more than I do.
My philosophy bigger is better you can't go wrong with getting something bigger than you need.
The 250 truck may be fine for what you plan on towing but what about the future? In the words of Yogi Bera "It's tough to make predictions, especially about the future. Who knows if the unit you are happy with today will no longer suit your needs in the future. In a short period of time I traded my truck camper for a 5th wheel that I thought was way bigger than I would ever need. Now I am about to get something even bigger. Fortunately my Dodge (purchased new) will be able to handle the next 5th wheel I plan on getting. If my truck isn't big enough to pull it I probably can't afford the camper.
You mention adding airbags to a 250 / 2500 but that does not deal with the issue of overloading your tires.
You also mentioned a rough ride. Most of the time I drive my Chevy Volt and leave my fuel guzzling truck parted but to day I needed to use the truck. The ride was a bit harsh today but when I add the weight if the camper on to the truck the extra weight really smooths out the ride
