I would mount it as high as I could to prevent flare-up from vehicles lights directly behind the fifth wheel.
Wireless cameras might be a good choice so you won't have to run long cabling back to it from your truck. If you do run cables you will need water tight quick-disconnect MIL-SPEC type connections between the truck and trailer.
Just a couple of my thoughts - used to see alot of rear camera posts on ebay with lots of info and photos - The commercial truckers use this market big time.
