I wonder how much overhang to bed rail clearance your friends fiver had? I would get with him and check on that. I see a lot of setups with what I consider too little clearance. And if you have enough, which I consider to be 6" minimum, a 3' rise in 40' should not be a problem.
Dragging the rear isn't a huge concern on some fivers. You can add skids or wheels (wheels actually eat more clearance than skids) and let it drag, but you have to have the structure back there to mount them. A lot of fivers with rear caps don't have well built bumpers. One of the reasons that rear caps are way overrated IMO.
