Any of those trucks will serve you well. I think all the diesels come with an exhaust brake as standard now.
As for a dually? personal choice, if you stay within weight limits, but my truck is within all weight specs and handles my fiver just fine, even better than my 2006 GM dually
GM really beefed up the frame, suspension, brakes and steering in 2011 and my 3500HD SRW has a 100 lb higher GVWR than my 2006 GM dually.
