With the squared off lower front corners of the 5er (newer ones have contoured front caps) I would definitely go with a long bed or a short bed with a slider hitch. You would definitely have the potential of knocking out a rear window of the truck on a tight back in turn with short bed and no slider. Good friend knocked out his back window with similar 5er and short bed. Traded for a newer 5er with contoured front cap and no more problem (and with a little more care).
The 7.3 has been one of the most reliable engines made. Not nearly the power of newer engines, but definitely up to the task. And newer trucks have a much higher payload rating. Check the numbers of the trucks you are considering.
1 ton (F350/3500) SRW would be good to look at.
