To answer your question. To much load capacity does not help, but it will not hurt either. If you know each axles weight and the tire is sufficient to carry that weight then that is all the tire you NEED but some extra does not hurt.
However, a low speed rating will hurt. The speed rating is directly related to the tires ability to handle heat. The leading cause of blowouts is heat not load. Heat can come from a lot of sources but crossing the desert or from a nail lowering the tire pressure, or from driving to fast for the tires rating are the surest ways to overheat a tire.
Get a tire rated for your load at the highest speed rating you can find in your size of wheel.
OH! and make sure your wheel will handle the PSI of the Tire. I guess that could be a HARM from getting to much load rating. You have 125 psi and the wheel is only rated for 100 psi or less.
