a variety of mouse proof containers for things like cereals, crackers, chips, candy, packages of dry mixes...anything a mouse can chew a hole in.
a good knife sharpener.
we use a small can opener that runs on a battery and fits in the utensils drawer.
a variety of spices in the little bitty jars.

if she drinks wine, a bottle of wine and 4 plastic wine "glasses" that won't break. I like the ones without stems because they fit in the drink holder on our outdoor chairs and won't tip over in the wind!
A note that says you are taking her somewhere on the next trip that she's always wanted to go. And give her a travel book from there.
Kindle if she likes to read. Gift card for Amazon.com or Barnes & Noble if she has a Kindle or Nook. A small pillow for reading.

X2 on a oxygenics shower head. If she has never had one they increase the water pressure in most RV showers 100%. She will love it!

A Ninja is another cool gift idea. The darn thing is probably about $100 on sale. It looks like a small pressure cooker. It is an oven, a crock pot, and a stove all built into one. It she does any cooking in the RV she will love that thing.
