Are there any other "options" needed on the truck, like skid plates, rear locking differential or integrated trailer brakes?

The V-notch steel gate is what I have and purchased at Camping World but there are many online places to get the tailgates. I tried the molded plastic V-notch tailgate and didn't like it...remember they are truck specific. Very easy to put on and take off. Below is one place I have bought from before:
TAILGATE
Should already have brakes on the trailer and make sure your truck has the trailering package and the newer trucks have an integrated brake controller...if not Prodigy makes a nice brake controller. Should also be a 7-pin connection plug in the bed of the truck, if not you need to get that installed
PRODIGY
As for a hitch if you plan on going with a short-bed truck get a sliding hitch (whether you choose it to be automatic sliding or manual sliding is personal preference)...Pullrite makes a nice sliding hitch; I have a Reese hitch with a long bed truck; whatever hitch you choose make sure it is rated for at least 16,000 lbs
I also recommend the truck be a diesel, 1-ton minimum, dually but again this is your choice; I have the dually which helps with stability on the heavier fifth wheels which is what the Designer is
