Cruz, the dual pane windows would have helped here some. What I have done in the past when it gets that hot is to open the ceiling vent in the kitchen and let the exhaust fan pull some of that heat out. It all rises to the top. Also, check you supply and return openings up at the ceiling assembly to make sure you don't have a leak (supply mixing with return).
