Just get a 50a to 30a adapter. Plug into the 50a on the pedestal, flip the switch and all you'll get is 30a power into your rig..
If you exceed 30a in the rig, your rigs breaker will blow first. The same as if you plugged into a 30a pedestal.
Plug into the 20a and you'll still be fine.. You'll just blow the breaker on the pedestal if you go over 20a in your rig, so you won't be able to take advantage of all 30a in your rig.. Easy, huh... ;)
