Here was some numbers from another source on the Sammy fridge I have and what seems to be good info on this topic in general:

I went back and watched the video and he mentioned at one point getting 15A on the Kilowatt so since its AC only I assumed x120V ... not really sure why I remembered it as 10A from before. Still a little confusing to me, but he also mentions only seeing a couple hundred Watts so must be x12.7 or so volts instead as you mention so think I just got it all mixed up.
The final numbers draw numbers were:
BMK Reading: 200 amp hours in 11 hours
Kill-A-Watt Reading: 1.530 kwh in 11 hours
I am still absorbing/learning this but really my goal is just to be able to make it through the night with fridge on and some heat (yes, that is a big variable too). I have the 500W solar during day to help and will always be running the generator multiple times during the day and especially in evening and before going to bed to hopefully have a full charge for the night hours.
Maybe I need to look into lithium batteries also with my limited battery storage room if they ever become remotely affordable.
