I have the same truck. I haul a 38 ft Sierra Sport toyhauler with a 2300 lb pin weight. Dry weigth is just shy 11,000 lbs. I have never loaded it to the 15,900 lbs GVWR.
I have the 3:73, and with the opinions I have on the truck it says my fifth wheel max is 11,900.
You and Spud are correct, 12k loaded weight will be about your limit. It will work fine, for the type of towing you mentioned. The Ford 6-speed works great for towing, even with 3.73 ratio. Just lock out 6th, tow in 5th, and let the 6.2 rev when needed.
