The signs that you are over your limits will be subtle.
A wheel will not just break off like in a cartoon. However the rig may feel a "bit tippy" or unstable at times.
If you have never towed with a truck that is within ALL of its towing parameters. The truck that is not within its parameters may seem fine because there is nothing to compare to.
Towing a trailer with drum brakes feels fine until you tow the same trailer with disc brakes installed and realize how poorly the drum brakes were performing.
