Fifth Wheel Suggestions

Hello all, having camped with friends and family in everything from a tent to class A, B, and C campers we are finally in the market for our own RV and are looking at fifth wheels. I've been researching for a while, but can't find exactly what I'm looking for. There are so many manufactures, brands, and models that it is a bit overwhelming, and it feels like I may never be able to check them all. So I'm hoping people her might be able to point me in the right direction.

Basically, I'm looking for a 35' or smaller, front living, rear bedroom rig, with dual opposing slides in the front living with dual opposing hide-a-bed sofas, and a dinette that seats 8 (and converts into a bed as well). Also, as I fully expect to be out in wintery conditions, down below freezing (and even potentially below zero), insulated dual pane windows, "arctic" insulation, enclosed and heated underbelly & tanks, lines, hoses, etc are required. I hope to do a bunch of boon-docking also, so proper preps for dry camping (i.e. large tanks, dual-or-more batteries, generator, solar, satellite internet and tv, etc). Air ride, disc brakes also desired. Any recommendations on manufactures who have/can provide such a rig?

Finally, I plan to get an F350, crew cab, 4x4, dually, diesel tow vehicle. What size (weight) trailer is the maximum you all would feel safe pulling with this truck anywhere in the hemisphere (mountains)? I'm given to understand that the most concerning part is stopping power.
