I agree with the others that you are going to need at least 3kw to run your a/c, and larger would be better.
Beyond that, it's difficult to know all your circumstances, so I'll just throw out some things to consider.
Realistically, how many times will you want to get out and start the generator? Maybe you should consider electric start. Can your wife/kids start it if you are not around? Should you consider auto-start with a transfer switch?
How about security? Can you leave it sitting out? In your truck bed? Assume it will be too heavy to move by hand. Two in parallel have the advantage of being light weight, and in the winter you could run just one.
Lots of generators out there, but you'll need to consider those things before you select a unit.
Make sure it is an inverter. Too many things don't run well on modified sine wave versions.
