I run mine with eco off for 13.5 ac. I have also used the microwave but try not to. I have led lights so I could turn everything in the rig on and it wouldn't matter. The the 3000 is slightly quieter than a 2000 iirc the specs.
Mine is bolted in the truck bed in front of the fifth wheel hitch also have remote start. I ran 10 gauge wire a cable from the transfer switch up and out under the nose of the fifth wheel by the pin box and it will reach all the way up to the generator in the bed. DW can fire it up whenever she wants if I'm not there
If you want to stay with a 2000 you might consider the micro air start unit for your air conditioner unit
