Years ago with our last 5th wheel we did the hitch on the pin box method and would do that again if I need too. But the only thing I don't like about that is you either should put a cover over your bikes or they take the brunt of the rain, bugs, etc.
Most of the time now what works by far the best and quickest for us when it is just my wife and I is to take the front wheel off the bikes and toss them in the back seat (seat folded up) of our truck. They are the most safe there and out of the elements. On the rare occasion our now older kids go along, you can easily fit 2 bikes in front of the hitch laying flat with a wheel off and roll a couple inside the fifth.
If I have a choice I would rather keep them safe and dry versus being out in the elements and the potential for theft especially when you have expensive bikes
