I had an 2005 Raptor 3612 myself, the jacks were not that slow at all. You pull the pin to drop the foot to the ground, reinstall the pin with the foot as close to the ground as you can, and raise it up. Mine moved pretty quick.
What is your battery setup like? Do you have 1 battery or more? Is it a dual 6volt setup? If you have a single Group 24 battery that might be the problem. You might try, assuming your truck is setup to charge as you run the engine, is leaving the tail hooked up so you're getting some extra power.
