This is what I would do. Water faucets are very easy to replace and pretty inexpensive. Would definitely not cancel a trip due to a broken one. I replaced all of my cheap plastic ones in my RV.
It's not just the faucet, but what else may have frozen behind the walls or under the floor.
Take trip to FL and get there and find out you have a burst water line under the floor somewhere?

You are correct there could be a hidden break, but Pex piping used to today is pretty durable and forgiving. The OP is here in Maryland are temps will be near 50f today. I would install faucet or at least cap the lines and pressurize the system and see what happens. The OP could test the system using anti freeze to avoid winterizing again.
