For you, it sounds like a smaller tank is fine. We camp a lot of places that lack full hook-up so we need a little more grey water capacity. But when we go to places that do have full hook-up, a 5 gallon tank would be enough because we just leave it open most of the time ;-)
And I'm with you on the 2nd bathroom and black tank. There have surely been times that we wish we had a second bathroom, but for the most part, I don't believe its worth the lost space to have that 2nd bathroom.
