We have an island kitchen and while we cannot stand behind the island with the slides retracted, with a little planning we can get everything we need to make a quick lunch while on the road.  One side of the fridge is accessible, so I just make sure anything I need is on that side.  Usually the only utensil we need is a spreader with a serrated edge for cutting and spreading, so I make sure that is available.  I enjoy the prep space that the island affords as I do cook a good bit.  One of the greatest advantages is the room  for two people, or more to work in the kitchen.
