When leaving my 5th Wheel for an extended Period without Electric hooked up, how long will my Frig work on a full 30 Pound Propane Tank?

Longer than your battery unless you have solar.
Yup, this, you need battery power to run fridge.

The frig runs on propane, but also needs 12Vdc for the control circuitry.
