With fifth wheels, the height is in the front by default (gooseneck goes up over the truck bed and, if you want standing headroom in the front, it has to be a certain height). Most modern 5th wheel toy haulers come in around the 13'3" - 13'5" range. If you want shorter, you may have to consider a travel trailer toy hauler.

Yeah, when you start going small, a bumper pull starts quickly making a lot of sense over a 5er. Doubly so if you want low profile.
A 5er eats up storage space and payload in the truck bed but typically makes up for it with a big underbelly. A small low profile 5er will still eat up the truck bed space but won't have much underbelly storage to compensate.
While 5ers tow real nice, a properly set up bumper pull should tow pretty darn well also.
