Why does having a 7 year old prevent extensive travel? My family of 4 have fulltimed for the past 2 1/2 years and we have friends who have done it for up to 7-8 years. Believe it or not, kids thrive given the opportunity for hands-on learning.
Why read about the Colonial War when you can GO to where the battles were fought and walk the battlefields? Why read about lava when you can go to Oregon and walk in lava tubes or to Idaho and walk and climb in a landscape that looks alien because there's so much lava? Math can be done in every day life (or via curriculum). English is improved as we have the kids interact with adults on a regular basis. 2nd languages can be immersive.
And friends- my kids have deeper and more meaningful relationships on the road than they ever did at home. Other kids who fulltime know how important it is to keep contact and spend time together as our visits can sometimes be short. OR you travel with another family for a spell (or set it up so you zig/zag and meet up every other stop or so). There's a huge community of us families who fulltime.
Life on the road with kids can be AMAZING. :)
As for camper choices- we have a long bunkhouse fifth wheel and are upgrading to a long toy hauler. But we have friends in small trailers, non-bunkhouse motorhomes (where beds literally are made up every night), and just about any other setup you can imagine. For my wife and I- we wanted to have a hard door between us and the kids AND we didn't want them immediately outside of the bedroom for privacy at night.
