I have a 2012 Cameo with Pex. The Cameo does not indicate what pressure to have your water. But I have a note that I got from somewhere saying 45 PSI, however the pump that is installed in the 5er is set for 55 PSI. So I would not exceed 55. A word of advise. The Cameo does not have a water shut off for the toilet. It might be a good idea to get a PEX valve fitting and install the shut off valve, just in case you have a toilet problem.
If you want to increase your water pressure for the shower, fill your water holding tank and run the pump when taking a shower. The pump will compensate for any low PSI coming into your coach. I just had to install a new pump and it mentioned this feature in the pump install brochure.
