For me, it depends on where we are going. My rig (2006 21ft Attitude)has a 100 gallon fresh water tank and I tow with a Chevy Z71 (with rear air bags) It is right at the max towing capability when loaded and my tanks are located over the axles.
If going to dez (just 2 hours away), it is filled. If going to beach (an hour away), it is also filled. If going to Mammoth or further (5+ hours away), we wait and fill up in town or at the rest stop.
For me, every extra pound I don't pull is worth it and required. And yes, I should go to a bigger truck. But the Tahoe does fine on flat and slight hills (80% of my towing), even with water. It's just the steep, long grades (20% of my towing) that it struggles with.
