IMO, you'd be better off keeping the galley tank closed until you're ready to dump. You'll have the same type of issue with food and "stuff" piling up in that tank without enough water, same as a black tank. Besides, you want to have plenty of somewhat cleaner water to rinse the hose after dumping the black tank. Never having 2 grey tanks, I think I'd dump 1) black, 2) galley, 3) shower; seems to me that this would be the order of "cleanliness" of the liquid.
Personally, we've been using a basin for washing dishes, then dumping in the toilet for extra water in the black tank, especially when we're boon docking and in a bit of a conservation mode.
