I did a quick Google search and read some of the on-line literature from a half dozen RV manufacturers that are using the term "mid-profile". The thing that seems to be consistent with their verbiage and their photos, is a reference to the height of the front cap.
This from the Coachmen Web site was about as close as I could get. So putting the pieces together, I think it's a reference to the height of the front cap:
"Coachmen has redesigned its larger Chaparralâ„¢ fifth wheel floorplans to incorporate a new mid-profile front end, ... "
