Since you are coming from Fontana, I would first take the 210 West until it merges with the I-5 North, then head up about 10 miles until you hit the 126.
From here you have several options.. At the junction of I-5 and the 126 is Travel Village. Nice park with several hundred spaces. There are pull throughs for overnighters as well. There is almost zero traffic heading into Ventura on the 126 in the morning as your now literally 1/2 mile past any LA traffic (it's all on the 5). If you decide to drive another roughly 40 miles you can stop at Ventura Beach Resort. Nice park, but really noisy. Unless you already have reservations, the beach can really be a problem, and besides, this is an overnight stop. There are a few places in Santa Barbara, but all pretty expensive. The next big park is probably 50-60 miles up in Buellton in Pea Soup land.
PS- NEVER depend on Rincon having space at any time of the year. If the weather is even close to nice in the city, you can be sure that the beach area could easily be full. Trusted me... I'm and expert
