Should I tow this? ?

That is a little lighter than I pull with my Duramax.

Never been an issue and don't buy into the 6MPG BS.

You should be fine, just beware of taking everything you own with you.

You'll be just fine in my opinion. You probably won't race up any hills or get stellar fuel economy but who cares - you're camping.

I've never seen a 2500 come from the factory with less than a E rated tire. Sometimes people go up in tire size and end up with a D rated tire, but going up in size brings up the load capacity as well.

It won't hurt to check, but I would give 10-1 odds that it isn't an issue.

Oh really, just because it is a 2500, means the tires are fine? What rating are on those tires, the OP or someone could have replaced them at some point. Not all ¾ ton trucks come from the factory with the same tires, Tires, and wheels have options when ordering. Tire ratings are sometimes overlooked when calculating what can be towed. And since it appears the OP's TV will be at or a little above the capacity tires could be something to be checked!

A diesel in many instances doesn't instantly add up to much much more payload/capability. And for many people such as myself, a diesel just isn't a viable option. For instance, my truck is also my daily driver and I live about 8 miles from work and tow about 6-7 times a year, once maybe twice I tow 200 miles but most of the time I'm only towing around 30 miles on flat road. I have a 2015 Silverado 2500HD gasser with just slightly less payload than the OP.
11,000 lbs.? Are you kidding? I'd be just fine towing that! Up the steeper grades my rpm's will run up but who cares? That's what it's designed to do. How often are we all climbing mountains around here anyway?

Many more things come into play to decide if a diesel is worth it to people. As long as your within your capabilities, have at it for Pete's sake.

OP is not looking at 15,500#!

He is looking at about 11 000#, that engine is better than the old 7L so likely will be fine.

in 08 I purchased a chev 2500 hd 7.0 vortex all the manufacturers lit said i could tow an 06 raptor around 15500 i picked it up in Tenn. by the time i got it to Joplin, i stopped at the dodge dealer and traded it off for a diesel 1st long hill that truck saw on the way home i had my foot through the floor board and was doing a whole 15 mph it was down right embarrassing buy a diesel

The OP can carry that 5er with ease!!! He should also be able to pull it just fine with the 6.4 Hemi. The OP's Payload si 3,148 from the yellow sticker

GVWR 12,475#
Hitch Weight Dry 2,075#
Hitch Weight Wet 2,495# 20 percent of 12,475

3,148 - 2,495 = leaves 653# for passengers and stuff, at the trailers max GVWR. So if the OP tows at 1,200# of stuff in the 5er pin would be about 2,160# then the OP has close to 1,000# for stuff!

As long as you stay within the manufacturers guidelines, there should be no need to worry. I agree that you're MPG will add up to poop, but it's far cheaper to keep her than to lose thousands trading in for a diesel.
