To each their own. Buy the one you like and enjoy the hell out of it. Anybody objects, kindly invite them to buy their own **** sink. It's really pretty simple.
I prefer SS to plastic myself. "All that polishing" has never been a problem for me. I don't like having scumminess in my sink, (or, for that matter, in my pots and pans) and I like being able to see when it is there. A little Bar Keeper's Friend and a wet paper towel makes for 10 seconds of rubbing and I can SEE it's clean and shiny.
But YMMV.
