This is the route we will probably go for our next RV. We have a Weber Smokey mountain 18.5" Smoker that we use at the house and we have taken it on trips. However, the best part of smoking is what makes it horrible to put in an enclosed storage bay. While our smoker will break down, it is usually a mess and leaves a lot of smokey odor if placed in an enclosed area too long. We've always hauled it on our kayak trailer or in the bed of the truck.
The Traeger looks like a good solution, but some owners have temperature control problems. A good solution is posted here...
