If all else fails, consider the possibility that you may have a "high pinning" issue. You may have raised the trailer too high before unpinning and it is lifting up on the hitch and holding it in place. Try leaving a little weight on the hitch and let it slide off as you pull forward.

I would do a little trial and error exercise with the hitch both hitching up and releasing the 5th. wheel in various positions, high, middle and low. See if you can find the sweet spot where it both hooks up and releases. You might find that the positions might be different for hooking up the 5th. wheel and then realeasing/unhooking.
I had the same problem at first when I got my 5th wheel. When I was hooking up, I had the 5th. wheel to high and the hitch did not make the plate become flat as I backed up. I bent the little lever inside the hitch and I couldn't get the 5th wheel hooked with out numerious attempts. Had the lever straightend out, then lowered the 5th. wheel so it had to slide up on the 5th. wheel hitch. Now I can hook up or unhook in 1 attempt without banging the 5th wheel and the hitch on the truck.:)
