We've Dish month-to-month with Tailgater that we've had mixed use of. Only two places in a cross country trip let us 'see' all the satellites, what with trees, mountains, other campers, whatever.
For data, we use an AT&T hotspot (separate device, not a phone). Went with a separate one so it could be used while traveling (I have to drive, wife surfs!). We've been from Virginia to San Francisco and back, and from VA to Arizona and back and not had any coverage issues other than two places that no one got any coverage from any carrier.
As for streaming - that uses so much data that even free WiFi places will throttle or knock you off. Just about every CG will say not to do it if theirs is anywhere near usable.
