Where is "level" determined on a fifth wheel?
Or in my case, a gooseneck horse trailer? What is the place a manufacturer base the placement of the levels off of if I were to double check?

On our fiver,I check for plumb (not level) on the ouside of the wall between the axels.If it is plumb there,it is level side to side.
You may find that the side may need to be a little off plumb one way or the other in order for your unit to actually be level side to side.
I use a 2' level.DW moves the truck forward or back,I place the lego blocks where needed,DW moves the unit onto the blocks...done.
