Congrats on retiring fairly young. While there are some that can FT in a Class C with a Gvwr of 14,500 lbs I do not think that will give FTing a fair chance. As you are realizing, a C has very little storage or CCC. Add three dogs and only a 5K hitch... a 3500lb SUV and a 3500lb is well over what your C can do.
Since the SUV is a 2016... retirement splurge??? I would suggest getting rid of the C and buy a more capable Class A with more of everything... like a 7.5K hitch for starters. This will give FTing a better chance of succeeding.
Backing the trailer up will be easier than most would think although there are often pull through sites... no backing. I'm at 57' and do not find it a problem to find sites long enough, even in USFS CG.
