You may be able to establish legal residency in many states with a mail forwarding service but your problem will be California.
If you stay in the state (CA) for more than 1/2 the time following your establishing residency in another state California will still consider you a resident.
You said 6 to 10 months to move out of California so you will still be a resident of California. Your purchases of fuel, food and entertainment can and will be used to show that you have not left the state.
Your best bet is to just stay a resident of California and when you leave it will be a clean break. You can still start with a mail service if you want but may be just extra time and money.
