You need to figure out internet access options. You will not have any cell phone service out in the sticks, most places, much less 4G or 5G. Satellite services such as Exede or WildBlue are OK for speed but I don't know how they work with a portable setup.
Satellite services will require a generous battery bank and a good inverter, plus a generator to re-charge the batteries if you don't have shore power or extensive solar.
Either a class C with a towed vehicle, or a trailer with a tow vehicle, will be your least expensive entry points. A 5th wheel will require a much larger tow vehicle (generally) than a trailer.
There are pros and cons to a C + towed vs a towed trailer. You can't back up with a towed vehicle. With a C + towed you have 2 power trains to maintain. With a trailer you might take a little longer to set up, but not much once you get good at it.
Whatever type you settle on, make sure it has some spot you can modify for an ergonomically correct work area. Many people remove a dinette or bunks for a work area. A toyhauler trailer or C will have a good space where you could add a work area.
Also make sure you have some insulation and heated underbelly setup.
