Thank you for all the advice. Its a lot to take in and I will try to answer your questions.
As far as income on my current remote income we are looking at around $3000 monthly. I didn't mention boondocking because of a lack of money but because I like the concept. With hands-on work and it can add an extra $1000-$8000 just depending on what work I accept. The way it works these companies send me work orders, I can accept them or turn them down. Also, mind you that number will go down a bit because of me not being in a set area but should still be able to squeak a couple thousand out of the hands-on work if had to. I want to live very frugally, not out of complete necessity but by choice.
Internet I currently have a grandfathered in plan with Sprint for Unlimited 4g which I use on my tablet which has a mobile hotspot for 10gb of data and I can tether it to a PC unlimited. I have been pretty far out in the sticks and worked remotely with no issue using the connection. So as long as I don't change plans and can get sprint reception I should be ok BUT I am for sure going to check into a backup as recommended. I cannot believe I didn't even think about a backup.
I have been leaning towards a pull behind or a Class C with a small car/suv or possibly a moped as a tow vehicle but concerns about rain and your advice have pretty much ruled out the moped. So it looks like I need to visit some dealers and check out some different class C's and pull behinds. Can anyone recommend or point out brands I should avoid?
My plan is to purchase the RV this year or next, install the biggest solar system I can afford with a nice bank. Do some family vacations and small trips until my baby graduates in 21. Then go full time after moving her to college.
