What I did for clothing storage was to add a cubby-hole shelf above the bed in the back of the van. Your configuration may or may not allow such an addition, but it was simple and cheap to add and holds all my non-hanging clothing.
For clothes that I hang, I have a cheap expanding curtain rod ($10 at Walmart) that doubles as a privacy curtain for the 'bedroom' and a place to hang my button up shirts, jackets, etc.
Also, as a single guy full-timing in my van for over a year now, I've come to realize that I simply do not need as much food as I originally thought. A week's worth of food fits in my 2 cubic foot fridge and two small shelves. Rarely do I have more than 3 or 4 cans of food... so re-think your food storage too. Personally I have more space taken up in bathroom/hygiene stuff then food.
Lastly, one of the things that make B's so great over C's or A's is the fuel mileage. You and I have fairly similar vans, though mine has a fiberglass topper (I can stand up on mine, but at the cost of MPG). Not towing, cruising at 55, and slightly over-inflated tires, I can just get into the 15 MPG. However, towing (even a small trailer) instantly drops my MPG into the low 12's or worse. That may not sound like much, and maybe it is not to you, but that actually figures out to an additional $50 in fuel for every 1000 miles driven. I tour around the country so I drive constantly... and every $50 matters to me. If you too plan to tour, and can simplify enough to get rid of the trailer, you can have some extra cash in hand.
