You will find that this is just normal RV stuff. You have the right attitude and got in there and tackled it.
I see that you mentioned that you found info on line about the pump randomly kicking on. YES, I mention to people to pay attention to that issue. If the pump is randomly kicking on for just a second, it means the pressure has dropped and water has gone somewhere. At that point start looking for the leak. It's unlikely that a pipe is leaking in general. It's most likely to be the toilet or fitting etc. Make it part of your maintenance to look around your water heater, under sinks, in basement compartments etc for any tell tail signs of developing water leaks. You may see the beginning of slight lime deposits as drops of water develop yet they aren't bad enough t soak the floor.
I try to only run run off my pump and seldom connect to city water. I also try to keep the water pump shut off and always shut it off at night or when we leave. RV's are cheesy and it's very common to have fitting leaks.
If you upgrade the toilet you may like the Dometic 310 porcelain bowl high profile. I have had 2 and they seem to be pretty good.
In the same way that you experienced an indoor water leak realize that the same issue with water exists in an even worse way. YES, water leaking in from above. Go up on the roof and check every inch for any cracked Dicro, open seams etc. Do it every few months or so. If you have gone into a place with tight tree branches and think they dragged across your roof, get up there as soon as you set up and check for damage. Have some basic tools and sealers in case of damage. Some people keep a small roll of eternabond tape on hand.
I like the way you said everything was going well and you were LIVING BIG :). It's good to hear you are enjoying yourself. RV's are great but you have to keep up the battle to have everything under control. Good luck to you.
