We have the standard 1 shelf oven in our Motorhome and use it all the time. Our son loves DiGiorno Pizza. He usually has 1 a week. It bakes very nicely in the oven. The rack is set at the highest setting and the pizza goes directly on the rack. We don't use a pizza stone or a ceramic tile. Our son is very picky and would definitely let us know if there was an issue. We baked many DiGiorno Pizzas in the RV oven this summer.
We also like to make sausage biscuits. Our biscuits bake up nicely in the oven as well. We do use parchment on the baking sheet.
