Haven't had time to look around much more, nor clean everything. I have been at a campground for about a week and called garage today to schedule an appointment for them to look at it.
While on the phone with them flipped main battery breaker to on and turned the key. This time the dash lit up like normal, though didn't try starting. Everything seemed fully functional at this point.
Based on this, not quite sure it's a fused link, almost seems like some sort of relay problem. If it's not happening when bring it to a mechanic, not quite sure they'll be able to fix it.
Will keep this thread updated.
I am open to checking more things.
The battery terminals are solid and nothing is corroded. At one point the battery terminal was loose (not corroded), but fixed that. After fixed it that didn't fix this problem, but today it worked fine, so can't rule that out as a potential cause.
