Vista 26P owner here but this should work for you guys as well.
We like to boondock and need more fresh water storage. I purchased a couple of those 5 gal collapsible water jugs with the spigot on the end. I have a Coleman and one other brand jug that the spigot hooks directly to the antifreeze tube. To make this work turn the water inlet valve to fill and then the antifreeze valve on. Now all you have to do is turn on the water pump and the water in the jug will transfer to your freshwater tank. I also added a switch at the pump, this way I don't have to run into the motor home to turn the pump on/off.
If you have a hard plastic tank you could go and purchase some tubing and slide it over the antifreeze inlet and drop the other end of the tube in your tank, should suck the water right out of it.
