The Roadtrek Sprinter has a different A/C than my Chevy RT 190. I have the Dometic Cool Cat and there is no problem cooling down the van in 90 plus temps outside with interior temps well over 100 inside after the van has been parked in the sun. At times it can get too cold inside. Your RT is new. Take it in to service where you bought it and have them check out the A/C unit. They can test the temp coming out, the fan force, etc. The A/C is under warranty and they should make it right.
Putting Reflectix in the windows will help keep the interior cooler. But the 11000 BTU A/C if it is working correctly should be more than enough to cool the van interior even on the hottest days.
