On our 93 Winnebago 454 we had the same problem climbing hills in Vermont. I switched from dino to Mobil 1 and dropped the temp down considerably. It's been so long since I had the Winny that I can't remember the actual temps.
The other thing that we did was to install Doug Thorley headers. This gave us a much improved performance and improved the MPG by almost 20% by keeping the gas pedal out of the firewall. We drove it from Mass to San Jose CA with absolutely no overheating.
