A partially plugged radiator will cause that problem. When you are climbing long grades your engine is putting out lots of heat and the radiator can't dissipate it. A good radiator shop should be able to diagnose it quickly. Getting it out is an other issue, isn't easy I have done it twice, some coaches are easier than others.
